How to make nutrient-rich Chickpea Broth for kids

Chickpea Broth makes for a comforting soup for kids as it is loaded with healthy energy-boosting carbohydrates, protein, fiber and essential vitamins and minerals such as iron, magnesium, zinc, which help in better development of kids in their growing years. Here's a simple recipe of Chickpea Broth, which can be made at home.


1 ½ cup chickpeas, 6 cups of water, 1 large onion, 3 garlic cloves, 1 inch ginger, 1 inch cinnamon stick, 1 star anise and 3 cloves. 2 carrots, 1 cup broccoli, 1 tomato, chopped, 2 celery stalks, 1 tbsp ginger garlic paste, 1 bay leaf, 4-5 curry leaves, salt and pepper to taste, 2 tbsp olive oil.


To begin with this easy recipe, wash and soak the chickpeas overnight with a dash of salt.


Next, take a pressure cooker and add in chickpeas followed by water, cinnamon stick, star anise, garlic, ginger and cloves. Cover the lid and wait for 3-4 whistles.


Meanwhile, take a pan and add in olive oil and to this add onion, ginger garlic paste, curry leaves and saute. To this add in the veggies and cook this well.

Add in the chickpeas along with the some broth. Allow the soup to simmer.


Add in the salt and pepper to taste, adjust the thickness of the broth. Once done, add in the coriander and mix well.
