2 cups pumpkin puree, 1 cup roasted unsalted peanuts1 large onion, 3 cloves garlic, 1 tbsp ginger, 1 tbsp vegetable oil4 cups vegetable broth,1 cup coconut milk, 1 tsp ground cumin1 tsp ground coriander, 1/2 tsp cayenne pepper, salt and pepper to taste, garnish with chopped peanuts or coriander leaves.


To begin with this easy recipe, wash and peel and cut the pumpkin.


Take a pan and dry roast the peanuts, roast them lightly.


Take a large pot and heat the vegetable oil over medium heat. Add chopped onions and cook until they become translucent. Add minced garlic and grated ginger, and sauté for an additional 1-2 minutes until fragrant.


At this stage, add in the spices like ground cumin, ground coriander, and cayenne pepper. Cook for another minute to allow the spices to toast and release their flavors.
